Garlic Roasted Potatoes 🥔🧄

Ahh Potatoes, my favorite carbohydrate. I say this with no pun intended, but I am a slut for potatoes. Potatoes are the type of veggie that can be paired with anything, cooked/baked/grilled in any kind of way, and is acceptable to eat for breakfast, lunch, dinner, and snack time! What I am trying to say is potatoes are versatile and she's that girl.


Thanksgiving is my absolute favorite American holiday, and it's one I do a countdown for when turkey day is over. Soooo given that, I prepare months in advance and experiment with dishes that I would want to serve on the big day. Dont get me wrong, I love the classics, Mashed potatoes, scalloped potatoes, baked potatoes, french fries, all of it! This is a recipe I experimented with during the pandemic, and I haven't looked back. Garlic, parsley, and key spices elevate the dish from basic to delicious. As my series of recipes continues to prep for the holiday, I have to preface that this recipe can be made any time of the year, which is the wonderful thing about cooking! Screw the norms of when a dish is acceptable to eat, if you want to eat apple pie in July, you go eat that apple pie!


Now that I am off my soapbox, I love using Yukon petite gold potatoes. You absolutely can use the full-size potatoes and cut them up into smaller squares, but with the petite ones, I find it easier to just slice right in half. You can prep these ahead of time or serve them immediately once fully cooked. This is the perfect side dish, and even though Turkey is meant to be the star of the show, the side dishes will be all the rage.


Garlic Roasted Potatoes

Prep time: 15 mins Cook time: 45 mins


Ingredients:

  • 15-20 Yukon petite potatoes, sliced in the middle

  • 3 garlic cloves, finely minced OR 1 tablespoon of garlic paste

  • 2 tablespoons of oil

  • 1/2 tablespoon of salt

  • sprinkle of pepper

  • healthy sprinkle of paprika

  • sprinkle of red pepper

  • sprinkle of parsley flakes

  • optional: cheddar cheese and sour cream as topping


Steps:

  1. Preheat your oven to 400 degrees, and use a small 8x11 or small casserole dish, and spray cooking spray.

  2. Wash your potatoes well and slice right in the middle, adding to the dish.

  3. Once all is cut, add the oil and all of the spices and garlic. Using your hand or gloves, mix everything well.

  4. Cook the potatoes for 45 mins. The potatoes will be done once they are soft, which you can check with a skewer or fork.

  5. Let cool for 5-10 mins. Sprinkle the cheese, letting it melt.

  6. Bon Appetit!
