Peach Cobbler 🍑

It's Peach Season! Palisade peaches have flooded my local farmers' markets, and they have been hitting the spot in the hot weather. The only reasonable thing to do with them is make peach cobbler, right? Now, peach cobblers and I go way back. My mom used to on the rare occasion make peach cobbler and we as kids would eat it up. My siblings and I fondly think about that cobbler and ask about the recipe, but unfortunately, my mom lost it, so I tried my hand at recreating it, and it was delicious!

From my memory of my mom's peach cobbler, I remember there being a flaky crust on top, and the peaches being nice and juicy. When I researched other recipes, I learned everyone's method was very similar, which is having a more biscuit-like dough on top of the peaches. At first, I was hesitant but decided to give it a try. It was delicious, but had more of a cake-like texture to the top, and it completely covered the peaches. Given there is no shortage of peaches this season, I bought some more and tried my hand again at the recipe, but went with the more crumbly topping like I remember, and boy oh boy, was it divine!


My recipe is for the crumbly topping vs the biscuit one, as it is the closest to what I had in my childhood. Here is a link to a recipe with the biscuit topping that tasted amazing as well.


Peach Cobbler


Ingredients:

  • 5-8 peaches, sliced (depending on your dish size)

  • 1 tablespoon of lemon juice

  • 1/4 cup brown sugar

  • dash of cinnamon

  • dash of nutmeg

  • dash of vanilla extract


Crumbly top:

  • 1 cup flour

  • 1/2 tsp baking soda

  • dash of salt

  • 1 cup of old-fashioned oats

  • 1/3 cup of brown sugar

  • 1/3 of granulated sugar

  • 3/4 cup of melted butter

  • 1 tsp of vanilla extract


Steps:

  1. Preheat your oven to 350 degrees, and lightly spray a 9x11 dish or a round dish, depending on how many peaches you have.

  2. Peel your peaches (optional) and cut into slices. Place into a bowl and add the sugar, spices, lemon juice, and vanilla extract, and mix with your hands. Transfer into the dish and spread out the peaches evenly.

  3. In another bowl, add flour, baking soda and salt and whisk. Add the sugars and oats, and whisk. Pour in the melted butter and vanilla extract, and using your hands, mix well until all has been combined. If you need more oats, and in as needed. It needs to be crumbly, and if you feel it's more sticky than crumbly, add in a tablespoon of flour and mix well.

  4. Top the peaches with crumbles until they're all covered.

  5. Pop into the oven and bake for 30 mins, or until the crumble has browned.

  6. Serve immediately and pair with ice cream.
