Alright, I'll let you in on a little secret. This is the most straightforward recipe, but it is easy to mess up quickly! The secret to making this perfect is patience and speed! I have made this recipe countless times and have certainly messed up by letting the marshmallows cook too long, adding too much cereal, or even spreading the rice krispies too thin! I've certainly learned a ton through making this recipe, but it's one of my fav's 😊


Now, another tip I learned through this process is that mini marshmallows are the better option to cook with; however, if you do not have access (such as myself, who uses halal marshmallows) or the store is out of minis, normal-size marshmallows will do. Until recently, I had only been using large marshmallows, until my local market that sold halal marshmallows finally received a shipment of mini ones.


Again, this recipe is simple, yet needs your attention, so be warned...


Rice Krispies Treats

Prep time: 10 mins Cook time: 15 mins


Ingredients:

  • 6 tbsp butter

  • 16 oz mini or medium-sized marshmallows, set 1 cup aside

  • 1 to 2 tsp vanilla extract (if you like to be on the sweeter side)

  • 6 cups rice cereal (add 1 cup additional if needed)


Steps:

  1. Ok, two options here! One, butter a 9x9 dish OR line a 9x9 dish with parchment paper

  2. In a small pot or dutch oven, melt butter over low/medium heat until melted.

  3. Immediately add 6 cups of the marshmallows and vanilla extract and continue to stir until melted, making sure you dont cook it too long; otherwise, it'll burn!!

  4. In a separate bowl, add your 6 cups of rice cereal.

  5. Once all the marshmallows are melted, remove them from the stove and directly on top of the cereal. Mix well with a spatula and add the extra mini marshmallows.

  6. Add the mixture to the pan and press firmly (not too firmly) into the pan using a spatula or your hands. You can use parchment paper to flatten out the top.

  7. Now, this is where you need patience!! Let it sit at room temperature for at least 15 minutes or longer. Once they've cooled down, cut into squares.. Then, like me, eat half the treats in one sitting 😊
